I never tire of seeing the different stages a painting goes through, and am looking forward to working in acrylics myself.
I've obviously tried them before, but made the mistake many do in thinking of them as a quick drying oils. But they other qualities, such as the layering of colour, which I appreciate more now.
Hi Ian! Must admit I do miss the creamy texture of oils, even the smell I like. I'm using the winter to try to get a little bit further with acrylics...a whole different way of working, which I haven't even begun to master. But as they dry much too quickly in the high summer temperatures here, and I haven't had much practice with retardant yet, I may swap back to oils in a few months.
I know what you mean about the fascination of watching work in progress. As the saying goes 'I love work, I could watch it for hours' ;-)
